Ingredients:

FOR THE DOUGH:

400 gr strong bread flour (keep 100g of flour on the side for sprinkle the dough)

1 teaspoon of sea salt

1x7g sachet of dried yeast

20g of sugar

1 tablespoon of Dimino Olive Oil

Warm water 230-280ml

TOPPINGS:

Dimino Cherry Tomato sauce 300gr

Dimino Sicilian anchovies 8 fillets

Dimino Olive Oil 100gr

Dimino dried oregano 1teaspoon

Dimino capers, wash them with fresh water and leave them in water for 2 minutes

To add at home if you wish:

Pecorino Cheese 150gr

1 sliced Red Onion

Method:

For the dough add all the dry ingredients in a big bowl a part from the yeast which you will need to dissolve with some warm water. Then mix everything together till obtaining a soft ball and in the end add the olive oil.

Kneed the dough for about 4 minutes until becomes smooth.

Please make sure the dough is soft enough to be able to roll it.

In case add 10ml of warm water to it and remember to add the water little by little!

Place the dough into a greased bowl, cover  with some clingfilm and leave it into a warm place for about 1 hour, until double in size.
Once the dough is ready, divide it to form 3 balls ( around 220 g each) and leave them to rest for another 20-30 minutes. Dust a clean surface with some flour and then roll out the dough into a circle of about half cm thick.

Now I have got 2 methods for you to follow based on the oven you have got at home.
Preheat the oven at 320 degree Celsius and then start assembling the pizzas if you have a stone oven pizza.

Place the base into a pizza tray or pizza shovel and then add the toppings.

Spread the Dimino cherry tomato sauce, add the anchovies, saltless capers, sliced onion, Pecorino cheese, oregano, drizzle of Dimino Olive Oil and then bake the pizza directly into the oven surface for 7 minutes until golden and crisps.

Keep an eye on the pizza and move it around for having an even colour.

For those who have got an electric oven, preheat the oven at 250 degree Celsius and turn on your kitchen hob. Put on a flat non-stick pan with a diameter size of 26 cm which will be used for cooking the bottom of the pizza ( we do not want a soggy bottom pizza!) . Then pop into the pan the rolled pizza dough and cook it for about 2-3 minutes till the bottom turns golden. Once cooked add the tomatoes sauce and put the pizza in the oven for 3 minutes using the top of the oven only.  Get off the pizza and start dressing it by adding the anchovies, the capers, the sliced onion, some more sauce, the Pecorino cheese, the oregano and a drizzle of Dimino Olive Oil. Pop it in the oven for another 5 minutes till is golden and crisps.

Another drizzle of Dimino Olive Oil and Enjoy Dimino Sicilian Pizza!
