Dimino's Sicilian Pizza


500 gr strong bread flour

1 teaspoon of sea salt

1x7g sachet of dried yeast

1 tablespoon of sugar

1 tablespoon of Dimino Olive Oil

Warm water 260-280ml


Dimino Cherry Tomato sauce 300g

Dimino Sicilian anchovies 4 fillets

Dimino Olive Oil 50gr

Dimino dried oregano 1teaspoon

Dimino capers, wash them with fresh water for 2 minutes

Pecorino Cheese 150g

1 sliced Red Onion


For the dough pile the dry ingredients into a marble base or into a big bowl and then add in the centre the oil and some warm water and start mixing with the hands until you obtain a ball. Knead the dough for about 10 minutes until becomes smooth. Please make sure the dough is soft enough to be able to roll it. In case add 10ml of warm water to it to make it soft. Add the water little by little! Place the dough into a greased bowl with Dimino olive oil, cover with some clingfilm and leave it into a warm place for about 1 hour until double in size.
Once the dough is ready, divide it to form 4 balls and leave it again to rest for another 15 minutes. Dust a clean surface with some flour and then roll out the dough into a circle of about half cm thick.
I have got 2 methods for you to follow based on the oven you have got at home.
Preheat the oven at 320 degree Celsius and then start assembling the pizzas if you have a stone oven pizza.

Place the base into a pizza tray and add the toppings. Spread the Dimino cherry tomato sauce, add the anchovies, salt less capers, sliced onion, pecorino cheese, oregano, drizzle of Dimino Olive Oil and then bake for 7-10 minutes until golden and crispy.

For those who have got an Electric oven, preheat the oven at 250 degree Celsius and turn on your kitchen hob and put on a non-stick pan which will be used for cooking the bottom of the pizza because we do not want a soggy bottom pizza. Then pop on the pan the rolled pizza dough and cook it for about 2-3 minutes till the bottom turn golden. Once cooked add the tomatoes sauce and put the pizza in the oven for 5 minutes using the top of the oven only. Once the pizza start becoming golden you add the anchovies, the capers, onion, some more sauce, the pecorino cheese, oregano and drizzle of Dimino Olive Oil. Pop it in the oven for another 5 minutes till cooked.
